Japanese Wagyu beef has a reputation for being the best in the world, and its quality is due to the care taken over how cattle are raised. Okura Beef is our own original Wagyu, only available at The Okura Tokyo, and we ensure the very highest standards on our ranch in Shimane Prefecture. Only high-pedigree Tajima cows are raised, with no livestock from other markets. Cattle are born and raised on the ranch, and our farmers oversee every part of the process.
Tajima cattle are characterized by a low melting point of fat that ensures the beef melts in the mouth. The meat is rich in savory umami flavors and sweetness, and it has a lingering taste unique to Wagyu. Just like a good wine leaves a complex and long-lasting aftertaste, so does Okura Beef. Cattle at our ranch are raised for three months longer than normal Wagyu, meaning the umami flavors are even richer.
Okura Beef cattle are raised on the Matsunaga Ranch in Shimane Prefecture, a rural location set amid forested hills. Cattle are given the very best feed with minimal waste. Along with producing high-quality beef, the ranch prioritizes sustainability. Because the whole process of raising cattle takes place on one designated ranch, processes become simplified and more sustainable.
We procure Okura Beef cattle and use the entirety for ingredients without wasting any part, ensuring a complete cycle from production to consumption. A transparent agricultural production process is also an essential part of this eco-friendly, sustainable process.
